WINEMAKING


Grape Varieties: Carignan, Syrah and Cabernet Sauvignon.
The winemaking of “Kalos” aims to be the exponent of what our area can give of one self in each harvest. Because of this reason, we are looking for the oldest vineyards, with the best concentration (lowyield) and best health and quality grapes. All grapes are checked on the selection table, removing as much as necessary. Then we proceed with alcoholic fermentation of each vineyard (singlevineyard), that means, we need as many tanks as vineyards selected for this product and as small as the harvest handpicked from each vineyard.
Alcoholic fermentation takes place in a temperature range between 25º Cand 28ºC, looking for a fruity character. In order to get a high tannin extraction, we press grapes after over 25 days in tank.
Once the wine is finished, barrel aging starts for about fourteen months in French Oak, getting a colour natural stabilization and the oak tannin support; then after a soft filtering, we proceed with bottling.

TASTING NOTES KALOS 2009


Cherry purple colour with violet edge, dense and deep, very clean with a high brightness.
His nose is very intense and complex, displaying notes of fresh wood and toasted, then appears ripe fruit, blackberries, and a floral background, violet. In its evolution, the wine develops more spicy notes, cinnamon, pepper, and more complex aromas, mineral and slightly balsamic, mint. In short, Kalos is a wine that invites you to delve into the complexity of his notes and enjoy the intensity and directness of his aroma.
In his attack, the wine begins with a gentle flavor of ripe fruits, blackberries and a floral background, violet, and then gives way to intense notes of black chocolate, with a roasted touch, finishing with notes of licorice, slightly aniseed.
Colour, brightness and tannic structure, certify the youth of this great wine, with a whole life ahead, while remaining perfectly enjoyable at this time. Kalos is a wine to enjoy with time and along time.
